Add spices: Add garlic, cumin, paprika, coriander, and cayenne. Cook 1 minute until fragrant.

Add tomatoes: Add crushed tomatoes with their juice. Season with salt and pepper. Simmer 10-12 mins until sauce thickens slightly. Taste and adjust seasoning.

Make wells: Use spoon to make 6 wells in the sauce. Crack an egg into each well.

Cook eggs: Cover skillet and cook 5-8 mins until egg whites are set but yolks are still runny (or to your preference). For firmer yolks, finish in 190°C/375°F oven for 3-4 mins.
