Final Touches
Step 7 instruction thumbnail 7

Drizzle the saffron milk and melted ghee over the top layer of rice. Sprinkle the remaining fried onions.

Dum Cooking
Step 8 instruction thumbnail 8

Cover the pot with a tight-fitting lid. You can seal the edges with dough for a traditional 'dum' or place a heavy object on top. Cook on the lowest possible heat for 20-25 minutes.

Rest and Serve
Step 9 instruction thumbnail 9

Turn off the heat and let the biryani rest, covered, for at least 10 minutes. Fluff the rice gently with a fork from the sides before serving. Serve hot with raita.

Other considerations for this recipe

Soaking the rice
Soaking the rice is crucial for long, separate grains. Don't skip this step!
Cooking the rice
Be careful not to overcook the rice initially. It will continue to steam and cook during the 'dum' process.
Marinating vegetables
For a richer flavor, you can marinate the vegetables in the yoghurt and powdered spices for 30 minutes before cooking.

Fragrant Layers of Vegetarian Comfort

Mastering the dum technique transforms simple steamed rice into a theatrical centrepiece. This aromatic vegetable biryani relies on patience and precise layering, where partially cooked basmati meets spiced yoghurt vegetables beneath a sealed lid. The magic happens during those final twenty minutes of gentle steaming, as saffron milk and ghee permeate every grain.

The foundation rests on whole spices - green cardamom, cloves, and cinnamon - infusing the rice with warmth before the vegetables even enter the pot. Mixed carrots, peas, and cauliflower absorb the ginger-garlic paste and Kashmiri chilli, creating a vivid tapestry of colour and heat beneath the pale rice strata.

Perfecting the Layer

Success demands restraint during the initial par-boiling. Stop at seventy percent cooked; the grains must retain enough integrity to withstand the final steam without collapsing into mush. This textural discipline separates everyday pulao from celebratory biryani.

Serve this straight from the pot at your next gathering, breaking the seal to release a cloud of scented steam. Accompany with cool cucumber raita to balance the warmth. Each forkful delivers the satisfaction of slow food without the complexity of meat-based preparations.
