Instructions

For the Roasted Vegetables (Optional)

Toss bite-sized vegetable pieces with olive oil, salt and pepper. Spread on a parchment-lined sheet pan and roast in a 200C/400F oven until fork tender.

Make the Broth

Heat 1 tablespoon oil in a large pot over medium-high heat. Sauté the diced onion until tender, about 3 minutes.

Reduce heat to medium, add the smashed garlic, and cook until the onions are deeply golden brown.

Add the vegetable stock, water, dried shiitakes, rinsed kombu and mirin. Bring to a simmer and cook uncovered for 25-30 minutes. Remove the kombu.

Whisk in the miso paste and pepper. Adjust seasoning with salt or soy sauce if needed. Keep warm.

Cook the Noodles

While the broth simmers, cook the ramen noodles in boiling water according to package directions.

Drain and toss with sesame oil to prevent sticking.

Prepare Toppings

Prepare the crispy tofu and additional toppings such as steamed bok choy or sautéed mushrooms.

Assemble Ramen Bowls

Divide the noodles among bowls. Add the crispy tofu and prepared vegetables.

Other considerations for this recipe

Preserving Miso Flavour
Do not boil the broth after adding the miso paste, as high heat will destroy the beneficial enzymes and delicate flavour. Always add miso at the end of cooking and warm gently.
Adjusting Broth Consistency
If the broth reduces too much during simmering, it may become overly salty. Simply add a splash of water to reach your desired intensity.
Crispy Tofu Method
For best results, press firm tofu to remove moisture, then cube and pan-fry in a neutral oil until golden on all sides, or bake at 200C/400F until crisp.
