Cut the papaya crosswise into three equal pieces and scrape out the seeds using a spoon.

Scoop out the flesh from the top and bottom pieces to create bowls, leaving 1 cm (0.5 inch) of flesh against the skin.

Trim the rounded ends of the bowls so they sit upright, drizzle with 15 ml (1 tbsp) of lime juice, cover with plastic wrap, and refrigerate.

Peel the centre section of the papaya and cut 2 tbsp of the flesh into small dice, then refrigerate.

Coarsely chop the remaining centre flesh, place on a parchment-lined baking sheet, and freeze for 2 hours.

Purée 500 ml (2 cups) of the frozen papaya with the remaining lime juice and sugar in a food processor until smooth and silky, scraping the sides as needed.

Fill the refrigerated papaya bowls with the sorbet.

Garnish with the diced fresh papaya, dried papaya, poppy seeds, chia seeds, and lemon balm leaves.
